Beef is pure umami. From a cast-iron-seared ribeye to a three-hour bourguignon, every cut tells a different story. For steaks, pull from the fridge 30 minutes early, pat dry, salt aggressively and sear over screaming heat — Maillard browning does the rest. Braising cuts (chuck, brisket, oxtail, shin) need time and an acidic liquid (red wine, dark beer, tomato) to melt collagen into silky gelatin. Tarragon, shallot, black pepper, Dijon mustard, blue cheese — all classic partners. Rotate between bourguignon, pho, beef tacos, ragù alla bolognese, Korean bulgogi or a shared standing rib roast.
